A brief history of the tamal:

Although there is no historical evidence to indicate the exact date tamales were first made, we know that the small parcels of corn dough, or masa, date back to Aztec times, and some believe even further. The dish was served up to the Spaniards when they initially arrived in Mexico, and it was described by Friar Bernardino de Sahagun, one of the first to document the conquest. Tamales are parcels of corn masa filled with pork or other meat, and chile sauce, or alternatively they are stuffed with somthing sweet, such as fruit or salmon. After they are filled and wrapped, the tamales are enfolded in corn husks or banana leaves and steamed to doneness. Even today this flavorsome food must be prepared using ancient pre-hispanic method of processing the corn with nixtamal, or slaked lime. Mexican tamales have become popular fare all over the world. They are often served with a green or red sauce in restaurants in the United States, but most Mexicans like them plain, simple--and delicious. BUEN APETITO ( ENJOY )
